This easy and tasty gluten-free mushroom and bacon ‘pizza’ is so easy to make you can even get the kids involved!
You don’t need to faff about with pizza dough, simply use pitta breads, and while we’re showing you a mushroom and bacon pizza, you can experiment with any toppings you fancy.
Swap out mozzarella for cheddar or pepperoni instead of the ham, you can even add jalapenos if you like a bit of a kick!
This fuss-free recipe is a great choice for wheat-free eaters and also makes for a delicious and light meal, plus it’s so easy-to-make.
You could whip it up to take to work for lunch, or enjoy at home for dinner – if you want to bulk it out a little simply serve with griddled oil-coated asparagus and a large spinach salad.

1 x Pack of Waitrose LOVE Life Free From 4 White Pittas
200g Smoked British Bacon Lardons
400g can chopped Tomatoes
200g cup mushrooms, thickly sliced
100g cherry Tomatoes, halved
125g Italian mozzarella, thinly sliced
½ x 25g pack basil, roughly torn
1. First, preheat the oven to 200oC, Gas mark 6. Brush the pitta breads with oil and place on a baking tray.
2. Next, fry the lardons in a large frying pan for 3 minutes, add the chopped tomatoes and cook for 5-6 minutes until thickened. Spread over the pittas to the edge. Using the back of a spoon helps for full coverage.
3. Finally, top with the mushrooms and chopped cherry tomatoes. Arrange the mozzarella on top and bake for 15-20 minutes until golden. Scatter over the basil before serving.
