Never fear! We’ve got the perfect solution. These delicious banana pancakes require just a few eggs and a banana, all mashed up and fried in a pan.
And the fun doesn’t stop there, this recipe is gluten-free and dairy-free. They really are made with just bananas and eggs, nothing to hide here.
You’d be forgiven for thinking that you think you’d just end up with scrambled banana-eggs, but actually, follow this recipe and the final product resembles a pancake - piping hot and golden brown, with crispy edges.
But, do they really taste like pancakes?
Yes and no. While these are pancakes in the sense that they're cooked in the same way, and that they can be enjoyed drenched with syrup, they are not – we repeat, not - a replacement for your usual pancake.
But don't be disappointed — there really is more to these tasty bites. They are very custard-like with a soft texture and a creamy melt-in-your-mouth quality, kind of a bit like thick crêpes.
They also really taste like bananas, no shock there, right? But if you're not a fan of that flavour, this recipe won't be for you.
There are also dozens of ways to dress them up, if you're willing to add just a few more ingredients. Also, it's worth remembering that a pinch of baking powder will make the batter fluffier, and a bit of vanilla or honey helps round out that over-banana like flavour.
Of course we also added maple syrup and some fresh fruit to make it look nicer (technically bending the two-ingredient rule) but the basics are all there.
