Cooking with Guinness: 4 recipes for St Patrick's Day

  • Guinness pulled beef

    Ingredients (serves 1)

    1Kg Brisket of beef
    1 Onion finely chopped
    3 Garlic cloves crushed
    1 Red chili deseeded and finely chopped
    50ml White wine vinegar
    Juice of 1 orange
    50ml Worcestershire sauce
    1 tbsp of mustard
    1 tbsp of demerara sugar
    1 tbsp of runny honey
    200ml Tomato ketchup
    300ml Guinness
    Salt and pepper to season
    Slices of toasted sourdough

     

    How to do it

    1. Preheat the oven to Gas 3 or 150c. Place all ingredients, except the sourdough, in a bowl with the beef and mix well.

    2. Empty contents from the bowl into a roasting tray, cover with foil and cook for 3 hours or until meat is tender. During cooking baste the beef from time to time.

    3. Once tender take the beef out leaving the juices in the tray. Let the beef cool a little and pull the meat apart so it separates. Then place beef back into the tray and mix in with the juices.

    4. Bring back to the heat and serve on some toasted sourdough with some slaw.

     

     
     
     
     
  • Guinness Bread

    Ingredients (makes one loaf)

    600g Wholemeal flour
    150g Plain Flour
    75g Oatmeal
    2.5 Teaspoons of bread soda
    1 Teaspoon of Salt
    2.5 Tablespoons of brown sugar
    40g Butter
    480ml Milk
    200ml Black treacle
    250ml Guinness

    How to do it

    1. Pre-heat the oven to 170°Cat 170°C in a pre-heated oven.. Mix butter with all dry ingredients until the dough develops the consistency of breadcrumbs, add the milk, black treacle and the Guinness.

    2. Mix until you reach a wet dough. Bake in a greased bread tin for 40-45 minutes.

     
     
     
     
  • Guinness lamb kebabs

    Ingredients (serves 4)

    1 Trimmed loin of lamb 
    Olive oil 
    ½ Red pepper
    ½ Yellow pepper
    1 Small red onion peeled and quartered
    50ml GUINNESS Extra Stout
    1 Tablespoon of natural yogurt
    2 Cloves of crushed garlic
    ½ Teaspoon of ground cumin
    1 Tablespoon of chopped coriander
    Salt and pepper to season
    Juice of ½ a lemon
    ¼ Red chili chopped

    How to do it

    1. Mix together all of the marinade ingredients in a bowl.

    2. Slice the lamb loin into eight pieces and place it in the marinade. Leave overnight in the fridge allowing the flavours to mature.

    3. Dice the peppers and red onions, place in a bowl, then season and coat in olive oil. Now skewer the lamb and vegetables evenly onto four skewers.

    4. To cook chargrill the kebabs on the barbecue until the lamb is cooked evenly. Serve with a minted yogurt.

     
     
     
     
  • Guinness Brownie

    Ingredients (makes 12)

    100ml Guinness
    185g Dark chocolate
    50g Milk chocolate
    185g Butter
    3 Eggs
    275g Caster sugar
    Vanilla essence
    85g Plain flour
    20g Coco powder
    50G White chocolate buttons

    How to do it

    1. Line a baking tray with parchment paper and sprinkle white chocolate buttons in tray.

    2. Melt the butter, dark and milk chocolate together and add the GUINNESS. Remove from heat when melted.

    3. Whip eggs sugar and vanilla essence and fold into the chocolate mix. Sieve in flour and coco powder, folding in, in three stages.

    4. Pour into tray and spread out bake for 20–22 minutes at 160ºC. Serve warm with Vanilla ice cream.
