When it comes to baking, the basics can sometimes be the most difficult – and a sponge is no exception.

Richard Burr, who was a finalist on The Great British Bake Off in 2014, never has that problem. And thanks to some simple tricks he’s learnt along the way, his sponge is spot-on every single bake.
