1 tsp sea salt
1 tsp white wine vinegar
1 slice sourdough
1/4 red small chilli
1/4 lime (juice)
4-5 pea shoots for dressing the plate
Butter for the bread
1. In a bowl, mix together the avocado, white wine vinegar, salt, squeeze of lime and chopped chillies.
2. Poach the eggs in a pan while buttering the bread.
3. Add the avocado and dressing to the bread, layering the eggs on top.
4. Finish with a drizzle of olive oil.
